Temperature equipment still needs a method

FSA Safer Food, Better Business material says a probe must be kept clean and checked regularly so its readings can be relied on. Its example check uses iced and boiling water, while also telling operators to follow the manufacturer’s instructions. A purchase is therefore only the beginning: assign cleaning, checking, recording and corrective-action responsibilities.

For chilled storage, FSA material recommends setting fridges and chilled displays at 5°C or below so chilled food remains at 8°C or below in England, Wales and Northern Ireland. The business should use the requirements and guidance that apply in its nation and to its operation.

Allergen control is a system, not a sticker

FSA guidance says allergen information should be recorded and kept current, with ingredients retained in original or labelled containers. It also calls for separation, cleaning and other controls to avoid cross-contact. Labels and containers may support that system, but they do not replace current recipes, supplier information, staff knowledge or an allergen risk assessment.

PPDS food has specific ingredient-list and allergen-emphasis requirements. A generic marketplace label is not evidence that the finished food label is legally correct.
